The original flavour bomb is back! Now that aubergines are coming into season again, we're putting this much-beloved Indian curry back on the menu. 

This favourite dish is bursting with deeply roasted aubergine and cauliflower, a rich, creamy tomato and coconut milk sauce, tonnes of deeply aromatic spices, and has just a tad of warmth going through it. It’s a total crowd pleaser, and we're yet to come across anyone who doesn’t love our curry! (P.S.: it's nice and mild too, so a great option for both adults and children!)

Cooking instructions

Simply take your packet of Solid Stash from the freezer, remove from packaging and place frozen into a casserole or microwave dish. Add 1-2 tbsp water & warm on stove (medium heat) / in microwave, often stirring carefully, until piping hot throughout (10-15 min).

Pimping tips

If you have time, why not pick up one or more of these items from the shop so you are ready to pimp your meal? :)

  • Stir in a big handful of fresh spinach leaves 
  • Top with chopped fresh coriander
  • Serve wedges of lime on the side
  • Mango chutney is an ace accompaniment to this dish – so good!
  • A dollop of (coconut) yogurt on top works a treat, too
  • Scrunch some papadums over the top for an awesome textural crunch (if you can find some in the Belgian shops!)

Ensure it remains frozen and at a steady temperature during transport (which should be as short as possible), and utilise appropriate cooling kit for this. Once defrosted eat within 24 hours and do not refreeze. Consume within 6 months after preparation date.
