Corn ribs: even Ottolenghi loves them.
And indeed, it is quite a brilliant invention: juicy, sweet corn cobs are quartered lengthwise, which not only ensures that the "ribs" playfully curl up a bit during preparation, but also that *whatever* marinade you apply to them, it can really lodge itself in between those juice corn kernels for a maximum flavour explosion.
In other words: a super fun, delicious and colourful eating experience (and also: very simple and quick to prepare), with a whole arsenal of possible pimping options.
